Grandma’s Quick Nut Bread

Grandma’s Quick Nut Bread

1 cup walnuts
1 cup sugar
1 1/2 tsp salt
3 cups flour
1/2 tsp baking soda
1 cup dates
1 cup raisins
2 eggs beaten
1 cup milk
3 tbsp melted shortening
4 tsp baking powder

Mix together flour, baking powder, salt, sugar and baking soda
Mix in nuts, raisins and dates
Mix eggs and milk together, then add to batter
add melted shortening last
Let stand 20 minutes
bake in two greased loaf pans at 350 ~ 1 hour

This was a hand written recipe of my Grandmother’s. Quick breads originated in the US with pearl ash ( made from wood ash ) to leaven the bread.

Some modern versions have chocolate chips in place of raisins and dates.

Grandma’s Quick Bread and Butter Pickles

Grandma’s Quick Bread and Butter Pickles

6 large cucumbers, sliced
4 onions, sliced
1/4 cup salt
1 pint white vinegar
3/4 cup sugar
1 teaspoon celery seed
1 tsp mustard seed

Use fresh cucumbers, wash and slice
Slice onions
Mix vegetables with salt and let stand 1 hour
Drain and rinse with 2 cups cold water
Combine vinegar, sugar, celery seed, mustard seeds and heat to boiling
Pack vegetables in jars, add hot vinegar mixture to overflow
Seal at once
Cool and store

This was a hand written recipe from my Grandmother’s recipe box.
Pickles are mentioned in the Old Testament of the Bible. So they were known at least 4,000 years ago. George Washington collected almost 500 types of pickles.
