Zucchini over pasta

What to do with the zillion pounds of zucchini that arrive in the garden each summer? Here is a fast and easy pasta dish for those late summer nights.

2 scallions cut into small pieces
1 handful of mint (fresh if you have it) finely chopped
1 handful of pine nuts or chopped walnuts (optional)
1 large clove of garlic grated
1/4 olive oil
1 large or 3 small zucchini thinly sliced
juice of one half lemon

Toss the above ingredients into a skillet and cook until zucchini is tender.
Boil 1 pound of pasta and toss with zucchini mixture.
Add two handfuls grated Romano or Parmesan cheese

Pine nuts are actually seeds from about 30 different varieties of pine trees, most of the ones today come from the stone pine. They have been found in 2,000 year old Mediterranean and 10,000 year old South West US recipes.
