Grandma’s Cheese Bites

4 cups shredded Gruyere or Cheddar Cheese ( ~ 1 lb )
1/2 pound butter
1/4 cup sugar
1/2 tsp salt
dash cayenne
2 cups flour

-Cream butter and sugar
-add salt and cayenne
-stir in flour
-form dough into rolls 1 inch in diameter
-chill several hours or until firm enough to slice

-rolls can be kept in the fridge up to a week and sliced as needed

-cut into slices 1/8 inch thick
-place on lightly greased cookie sheet
-bake at 400 degrees ~ 10 minutes careful not to let them brown
-serve at room temperature

This was a hand written recipe I found in my Grandmother’s recipe box. I prefer this recipe made with out the sugar. Just cream the butter to soften it some.

Crackers were born in New England. In 1792 John Pearson of Newburyport made a cracker like bread he called ‘pilot bread’. Sailors loved it because of its shelf life. Later it became known as hardtack or sea biscuits.

Later in 1801 Josiah Bent burnt a bunch of biscuits which made a crackling noise giving future ones the name crackers. By 1810 business was booming in the cracker business. Bent sold his business to Nabisco.
