Whoopie Pies

These are like homemade, soft oreo cookies, but better. I loved these as a kid and still do. A friend of mine makes huge batches and gives them away as Christmas presents. They will keep a while in the freezer so make a big batch. I usually double this recipe because they go fast.

Whoopie pies are believed to have originated in Dudley Square, Roxbury, Mass in the 1920s at the Berwick Cake Company.

pie
2 c unsifted flour
1 tsp. soda
1/4 tsp. salt
1/3 c cocoa
1 c sugar
1 egg
1/3 c. oil
1 tsp. vanilla
3/4 c milk
Mix together first five ingredients
Add remaining ingredients, beat well
Drop by spoonfuls onto greased cookie sheet
Bake at 350′ for ~12 minutes

filling
1 stick butter
1 c confectioners sugar
3 heaping tbsps marshmallow fluff
Beat together and spread filling between two pies
